A2 vs A1 ghee: what actually changes

A2 refers to the type of beta-casein protein in the milk. Native Indian breeds like the Gir cow give predominantly A2 milk, while many high-yield crossbred cows give A1. The ghee itself is clarified fat, so the label really speaks to the milk and the animal behind it.

What to check on a jar

Look for a named single breed (Gir), the method (Bilona / hand-churned from curd), and a batch number you can ask a lab report against. Vague words like 'desi' or 'pure' alone tell you very little.
